Vitamin C is sensitive to the environment. It breaks down when it's exposed to air and light. By "breaking down", we mean that it is no longer active. And when any ingredient loses it's activity, it loses its benefits for our skin aka it's not doing its job.
Think of a bottle of soda. When you first open the lid, the carbonation is strong. You can see and hear it bubbling! In other words, it's active.
Once that soda sits open for hours, or even days, it's no longer be carbonated (it's "flat"). You can still drink it. It won't hurt you, but it's not going to be enjoyable.
